Easy Mojo Potatoes Recipe




– 3-4 large red potatoes, washed and chopped

– 3 cloves of garlic, finely chopped

– 1 teaspoon cumin


– 1 teaspoon red pepper powder

– 1 teaspoon thyme

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1/4 cup olive oil


– Juice of 1 lemon

– Zest of 1 lemon

– Chopped fresh coriander (optional, for garnish)



1. Preheat your oven to 200°C. Line a baking sheet with parchment paper or aluminum foil for easy



2. In a large mixing bowl, combine minced garlic, cumin, paprika, oregano, salt, pepper, olive oil,

lemon juice and lemon zest. Mix well to combine all the flavors.

3. Add the potatoes to the bowl with the mojo marinade. Stir until the potatoes are well mixed.

4. Spread potatoes evenly in a single layer on the prepared baking sheet. 9 You can slide between

6. After the mojo potatoes are cooked, remove them from the oven and place them on a serving
