Cheesy Chicken Fritters

 

 

 

Ingredients:

700 g Skinless chicken breast

2 medium-sized eggs

1/3 cup (40 g) almond flour

1 cup chives (chopped)

2 tablespoons parsley (chopped)

1/2 tea tablespoon garlic flour

pinch sea salt and freshly ground almonds (or to taste)

1 tablespoon olive oil (or more for frying)

Cheesy Chicken Fritters

Instructions:

Place chicken fillets on a board, cut into small pieces with a sharp knife and place in a large mixing

bowl.

In a large bowl, mix almond flour, egg, mozzarella, basil, chives, oil, garlic powder, salt and pepper.

Mix well to combine.

Heat the oil in a large nonstick skillet over medium heat. Add chicken mixture over ice or a large

spoon, add to skillet and heat gently to form fritters. Do not cover the pan, but fry the fritters in

batches, about 4 per batch.

Fry for 6-8 minutes on each side until golden brown. Remember that you need to cook at low

temperature, otherwise the outside will burn and the inside will not be fully cooked.
