1. Preheat your oven to 220°C. Line a baking tray with baking paper or lightly grease it and set aside.

2. Mix the flour, baking powder and salt in a large mixing bowl. Add the cold butter to the flour

mixture and, using a knife or your fingers, cut the butter into the flour until the mixture is smooth.

3. Whisk milk and Swiss cheese until combined. Be careful not to overdo it.

4. Place the dough on a lightly floured surface and knead slowly until it comes together. Roll out the

dough to 1/2 thickness.

5. Use a rolling pin or glass wheel to cut the cookies from the bread. Place the cookies on the

prepared baking sheet, leaving some space between them.

6. Bake the cookies in the preheated oven for 12-15 minutes or until the tops are golden brown.

Remove from the oven and set aside to cool slightly.

7. While the cookies are baking, prepare the veal filling. In a large skillet, heat some oil over medium

heat. Add the fried onion and minced garlic and cook for 5-7 minutes until soft and translucent.

8. Add the tender beef to the pan and cook for another 2-3 minutes until cooked.

9. Toss the beef with Worcestershire sauce and season with salt and pepper. Simmer the mixture for 5-

7 minutes until the liquid has reduced slightly and the flavors have blended.

10. To assemble the French cookies, cut each cookie in half. Place most of the filling on the second

half of the cookie and cover with the other half.

11. Serve warm French biscuits with Dijon mustard, horseradish sauce and au jus for dipping. Enjoy

these delicious and fun meats and cheeses!
