  • - 1.5 lbs baby potatoes halved
  • - 2 tbsp olive oil
  • - 1 tsp garlic powder
  • - 1 tsp smoked paprika
  • - Salt & pepper to taste
  • - 1 lb ground beef
  • - 1 packet taco seasoning
  • - ⅓ cup water
  • - 1 tbsp tomato paste
  • - 1 cup shredded cheddar cheese
  • - ½ cup diced tomatoes
  • - ⅓ cup chopped green onions
  • - ¼ cup chopped cilantro
  • - ½ cup sour cream

Method
 

  1. Instructions:
  2. Preheat oven to 425°F and line a baking sheet with parchment.
  3. Toss potatoes with oil, garlic powder, paprika, salt, and pepper.
  4. Roast for 25–30 mins until crispy.
  5. Meanwhile, cook ground beef in a skillet until browned. Drain grease.
  6. Add taco seasoning, water, and tomato paste. Simmer 7 mins.
  7. Transfer roasted potatoes to a skillet or oven-safe dish.
  8. Top with beef, then shredded cheese.
  9. Broil for 2–3 mins until cheese is melted.
  10. Garnish with sour cream, tomatoes, green onions, and cilantro.

Notes:
– Use ground turkey for a lighter version.
– Add black beans or corn for extra texture.
– Vegetarian? Use lentils or plant-based meat.
