Ingredients:

For approx. 12 patties

  •  1 medium zucchini (grated and well-drained)

  •  1 medium carrot (grated)

  •  1 medium potato (grated, squeezed dry)

  •  4 tablespoons oat flour or quick oats

  •  100g shredded cheese (optional – use vegan cheese for dairy-free)

  •  2 tablespoons fresh parsley, finely chopped

  •  2 garlic cloves, crushed (or ½ tsp garlic powder)

  •  2 large eggs

  •  Salt & pepper to taste

  •  1 tsp olive oil (for cooking)

Instructions:

1. Prep the Veggies

  • Place grated zucchini, potato, and carrot in a clean towel or sieve.

  • Squeeze out all excess water – this is key for that crispy finish!

2. Mix the Dough

  • In a large bowl, combine all ingredients: vegetables, oats, cheese, herbs, garlic, eggs, salt, and pepper.
